You think to yourself, “cold days like today are never going to end.” It’s rainy, windy and cloudy. Let’s face it, weather like that is suckish. Luckily, there is one thing that will warm you up and put a little life into your day.

  • 1 can Chipotle Peppers – San Marcos
  • 3 tomatoes
  • a quarter piece of onion
  • 1 clove of garlic
  • salt to taste
  • 4 medium sized potatoes peeled
  • Goya Adobo All Purpose seasoning
  • 6-8 Chicken Drumsticks

Step 1

Take your chicken drumsticks and season them on both sides, then place them into a pot. Be sure to make them cook on medium heat, and checking them and turning them every few minutes.

Next quarter your tomatoes, and place them in the blender. Then add the quartered piece of onion and your clove of garlic. Open the can of chipotle peppers and add as many as you would like, depending on how spicy you want the soup to be. After all of the ingredients are in the blender, add a cup of water to thin out the sauce.
If it’s still thick after blended, then feel free to add more water to your wanted consistency.

Step 2

Once the chicken is cooked, add the sauce to the pot. (Add more water until all the drumsticks are covered by the sauce)

While the sauce is heating up, now is the time to take the potatoes you had peeled and cut them into quarters (or rather, bite sized pieces)  and add them to the soup. It will be ready once the potatoes are cooked.

Serve with: Tortillas and lime (optional)

This is a recipe that will definitely warm you up and spice up your day 😉 it’s simple to make and doesn’t require many ingredients. I hope you enjoy this dish. See you in the next recipe 🙂
